This Tomato Avocado Toast recipe is seasoned to perfection and really easy to make. It is the perfect breakfast, snack or even a light lunch. It takes less than 10 minutes to prepare and you only need 7 ingredients (most of which are kitchen staples)
Recipe: (1 serving)
2 slices of your favourite bread (I love seeded granary or Guinness bread)
1 ripe avocado
1 tsp lemon juice (lime also works if your stuck)
1 tsp extra virgin olive oil
6 grape tomatoes, halved
A dash of balsamic vinegar
Chilli flakes (optional kick)
Method:
Toast your bread in a toaster until golden brown and crunchy. Cut you avocado in halve and put it. Scoop out the fresh avocado into a bowl and lightly mash (not to much though - you want to keep it chunky)
In a separate bowl, combine the lemon juice and season with salt and pepper to taste.
Divide your avocado mixture evenly and spread onto the pieces of toast. Arrange the sliced tomatoes on top.
Drizzle with your favourite balsamic vinegar, olive oil & chilli flakes.
