Simple & Satisfying Tortilla Pizza

If you're ever looking for a quick and easy dinner that doesn't skimp on nutrition and is still packed with all your favourite veggies, try this tasty crispy tortilla pizza (trust me, it is way nicer than a greasy takeout!)

Ingredients: (1 pizza)

  • 1 whole wheat tortilla wrap (my favourite are the BFree sweet potato wraps)

  • 2 tbsp passata (tomato sauce also works)

  • 1 garlic clove, crushed

  • 1/2 tsp olive oil

  • 1/2tsp dried herbs (my favourite are basil or oregano)

  • 50g cheese of choice (shredded mozzarella, cheddar, goat, feta)

  • Vegetable toppings (go wild!): cherry tomatoes, roasted peppers, olives, sweetcorn, red onion, pickles, jalapeños, spinach

  • For extra protein: tofu, prawns, shredded chicken, pepperoni



Method:

  1. Preheat the oven to 220 degrees celsius.

  2. In a heated pan, mix the passata, garlic, olive oil, herbs and season with salt and pepper to taste.

  3. Place the tortilla wrap onto a large baking sheet and spread sauce evenly across the tortilla, leaving ½ inch around the edges.

  4. Sprinkle with your desired cheese and toppings.

  5. Bake for 6 to 10 minutes until the edges of the tortilla are lightly browned and the cheese is bubbling.

  6. Let the pizza cool for a few minutes before optionally topping with fresh rocket and shredded parmesan. Slice and enjoy!
