A tasty and nutritious omelette that incorporates spinach, chopped tomatoes and cheese into your protein-packed dinner. This is one of my favourite go-to meals when I’m in a hurry and want something that is quick and easy to make.
Recipe: (1 omelette)
2 eggs
1 tbsp olive oil
40g baby spinach leaves
25g Parmesan cheese (shredded Swiss cheese also works well)
30g white onion, finely sliced
20g grape tomatoes, diced
1 tsp ground nutmeg
salt and pepper to taste
Method:
In a large mixing bowl, beat the eggs and stir in the baby spinach and Parmesan cheese.
Season with salt, pepper and a dash of nutmeg.
Coat small frying pan with olive oil over a medium heat and gently cook the onion and tomatoes for about 5 minutes until the onions have softened. Pour the egg mixture on top and cook, stirring occasionally for about 3 minutes, until partially set.
Flip omelette with spatuella and continue cooking for another 2 to 3 minutes to allow fully set.
Slide omelette onto plate and top with additional cheese and season with salt and pepper to taste.
This recipe is great because you can easily alter it to fit in any of your favourite vegetables (peppers and mushrooms also work really well), or why not try adding in some ham, chicken or tofu for even more protein.
