Peanut Butter Oat Cookies

These Peanut Butter Oat Cookies are the perfect afternoon snack! Barely crisp around the edges, chewy around the middle and perfectly tender on the inside, I'm sure they will be your new favourite treat.

Ingredients: (makes 20 cookies)

  • 320g of your favourite peanut butter

  • 2 cups lightly packed brown sugar

  • 170g melted coconut oil or 5 tablespoons melted butter

  • 3 large eggs

  • 2 tsp baking soda

  • 2 tsp vanilla extract

  • 213g rolled oats or old-fashioned oats ( gluten-free alternative if necessary)

  • Optional: Himalayan sea salt (for sprinkling)



Method:

  1. Preheat the oven to 180 degrees celsius. Line two baking sheets with parchment paper.

  2. In a large mixing bowl, combine the peanut butter with the sugar and coconut oil. Use an electric mixer or a large spoon to mix until well combined. Add the eggs, baking soda and vanilla, and mix thoroughly. Fold in the oats and mix until they’re evenly incorporated.

  3. Divide your cookie dough into small balls and place onto the prepared baking sheets, press down lightly with a fork. These cookies spread while baking, so leave a couple of inches in-between each one.

  4. Bake for 8 to 10 minutes, until they’re just starting to turn golden around the edges. Once ready, let the cookies cool for about 10 minutes before transferring them to a cooling rack.

  5. You can also sprinkle the cookies lightly with flaky sea salt before devouring!
